Struffoli Alla Napoletana

4 cups of flour

1 cup of honey

8 eggs plus 2 egg yolks

4 tablespoons of sugar

pinch of salt

4 tablespoons of soft butter

oil for frying (use deep pan)

Make a well….add eggs and yolks, salt and butter….mix to smooth dough, knead thoroughly, let rest for 1 hour. Cover with damp cloth.

Break off pieces of dough. Roll into sausages ½ inches thick. Break off pieces about ½ inches long. Drop into hot oil, fry until golden. Drain on paper towel.

Put honey sugar and a few tablespoons of water into a pan. Bring to a boil and simmer until the foam disappears and the mixture is yellow and clear. Lower the heat and immerse the struffoli with almonds. Stir quickly and pour onto round plate. Wet hands with cold water and quickly shape the Struffoli into a ring of a round dome.  Sprinkle with candy dots.
